  • Baking Mastery: The execution of this recipe is a testament to the beauty of baking, enabling you to create an impressive dessert that truly shines at any gathering.

Ingredients

  • Unsalted Butter: Opt for high-quality unsalted butter, which gives you control over the sodium content and ensures a balanced flavor profile in your cake. It should be softened to room temperature to help incorporate it smoothly into the batter.
  • Granulated Sugar: Regular white granulated sugar is ideal as it imparts the necessary sweetness without altering the chocolate flavor. The fine granules dissolve easily, ensuring a smooth and uniform texture.
  • Large Eggs: Use fresh large eggs at room temperature as they blend better into the batter, resulting in a cake with good volume and texture. Eggs also provide structure and stability to the cake.
  • Real Vanilla Extract: The use of real as opposed to imitation vanilla extract can elevate the flavor of your cake, adding a subtle depth and complexity to the overall taste.
  • All-Purpose Flour: All-purpose flour is versatile and consistently produces a cake with a tender, moist crumb. It’s the backbone of the structure of your cake.
  • Baking Soda and Baking Powder: These are crucial for leavening, which makes the cake rise during baking. They react with other ingredients to create gas bubbles, leading to a soft and fluffy cake.
  • Salt: A small amount of salt is necessary to balance out the sweetness and enhance the overall flavors in your cake.
  • Unsweetened Cocoa Powder: This is what gives your cake its rich chocolate flavor. Opt for a good quality natural cocoa powder for the best result, it can truly transform your cake.
  • Boiling Water: The boiling water is a key component in this recipe as it helps to bloom the cocoa powder, releasing its flavor and creating a deeper, more intense chocolate taste in your cake.

Substitutions and Additions

  • Unsalted Butter: You can replace unsalted butter with margarine or coconut oil if you’re looking for a dairy-free option, but be aware that this might slightly change the texture and flavor of your cake.
  • Granulated Sugar: Coconut sugar or raw cane sugar can be used as a healthier alternative to white granulated sugar, though they may lend a slightly different flavor to your cake.
  • Eggs: For a vegan twist, applesauce or mashed bananas can be excellent egg substitutes. They ensure the cake remains moist while offering a subtly fruity undertone.
  • All-Purpose Flour: Try using cake flour for a lighter texture. For a gluten-free version, opt for almond flour or a gluten-free all-purpose flour blend.
  • Unsweetened Cocoa Powder: If you prefer a less intense chocolate flavor, you can substitute unsweetened cocoa powder with dutch-processed cocoa powder. It’s less acidic and offers a milder chocolate taste.
  • Boiling Hot Water: Coffee can be used instead of boiling water to enhance the chocolate flavor. Use hot coffee and go for something like espresso powder for the strongest taste.

Additions:

  • Chocolate Chips: Add semi-sweet or dark chocolate chips to the chocolate ganache for extra bursts of chocolatey goodness. You could even add some melted chocolate over the top layer of frosting.
  • Nuts: Stir in some finely chopped walnuts, pecans, or almonds for a crunchier texture.
  • Dried Fruit: Some dried cherries or cranberries can provide a slight tanginess that beautifully counters the richness of the chocolate.
  • Spices: A pinch of cinnamon or chili powder can add a surprising touch.

Remember, these are just suggestions, and baking is all about experimentation and personalization. Don’t hesitate to tweak the recipe to suit your taste!

Instructions

Preheat your oven to 350°F. Carefully grease and flour your round 8-inch cake pans, then align the bottom with a round parchment paper. Set these prepared pans aside for later use.

In a large bowl (or the bowl of a stand mixer), combine the softened butter and sugar until the mixture is smooth. Follow this by incorporating the eggs and vanilla extract into the butter and sugar.

In a separate large mixing bowl, sift together the all-purpose flour, baking soda, baking powder, and salt.

In a different medium bowl, mix cocoa powder with boiling water until the cocoa dissolves completely and the wet ingredients mixture is lump-free.

Gradually incorporate the dry ingredients mix and the cocoa mixture into the bowl containing the butter, sugar, eggs, and vanilla. Ensure to alternate between the two as you add. Employ a low speed setting on your electric mixer to combine these ingredients properly.

Evenly distribute the well-mixed batter among the three prepared pans. Bake in the preheated oven for around 22 to 28 minutes, or until a toothpick inserted into the cakes’ centers comes out clean.

After removing the pans from the oven, allow the cakes to cool for about 10 minutes in the pans. Then, transfer the cakes to a wire rack for further cooling for approximately 10-15 more minutes. Ensure the cakes are no longer warm before applying frosting. Use a spatula to run around the sides of the cake to make sure they come out of the pan easily.

Place the first cake layer top-side down on a cake plate. Apply one-third of the chocolate buttercream and evenly spread it out in a thin layer.

For the second layer, trim off the rounded top using a knife or cake leveler. Position this layer top-side down onto the first frosted layer and apply another one-third of the frosting, spreading it out uniformly.

Repeat the process with the third layer and apply the remaining frosting over the top. Your chocolate cake is now ready to be savored. Enjoy!

How to make the buttercream

Now you don’t have to use this recipe for the icing of the cake – we used to just melt chocolate and add it!  But if you want to make it just like the recipe shows, here’s how to make chocolate buttercream frosting.  You will need:

  • 1 c. unsalted butter, room temperature
  • ½ c. cocoa powder
  • 16-oz. powdered sugar
  • 1-2 T. whole milk
  • 1 t. real vanilla extract

Mix the butter and cocoa powder in a large glass bowl until blended.

Add the powdered sugar and mix on a low speed setting until combined.

Stir in the milk and vanilla extract until you get the right consistency – then add to your cooled cake!

Don’t forget if you don’t want to go full buttercream, you could add the buttercream between layers one and two and two and three then top with melted chocolate!  Plus if you want to use plain buttercream, then just leave out the cocoa powder.

Recipe tips

  • For starters, there’s the butter and eggs – the recipe calls for ‘room temperature’ and that’s because they can take longer to mix in if they are cold.  If you forget to take the eggs out, you can always pop them in some warm water for 10 minutes to do the job. But make sure you use room temperature ingredients for the tastiest cake.
  • Another thing is unsweetened cocoa powder.  That’s because you are adding sugar to the mix so if the cocoa also has some kind of sweetener in it, this will make the mix sweeter than desired.  Remember, chocolate cake isn’t that sweet.
  • Don’t leave out the little ingredients like vanilla extract and salt as these add something special and will give you the best results.

Storage & Reheating

Once cooled, your triple chocolate cake recipe may be stored at room temperature. To do this, ensure the cake is thoroughly covered with either a cake carrier, an overturned bowl, or tightly wrapped in plastic wrap to keep it fresh. If storing in the refrigerator, it’s advisable to place the cake in a cake carrier or other airtight container to prevent drying out. The cake can be stored this way for up to a week.

As for freezing, yes, this cake is freezer-friendly. Once the layers are completely cooled, wrap them individually in plastic wrap and then in aluminum foil to prevent freezer burn. When you’re ready to assemble and serve the cake, remove the layers from the freezer, unwrap, and let them thaw at room temperature. This method ensures that your cake remains moist and delicious.

Recipe FAQ

Can I use a different type of pan for this cake?

Sure, you can use a bundt pan or a sheet cake pan in lieu of the round cake pans. However, please note that the baking time might vary depending on the type and size of the pan used.

How can I tell if my cake is done?

My cake turned out dry. What did I do wrong?

Overbaking is the most common reason for dry cakes. Make sure to check the cake for doneness a few minutes before the minimum baking time to prevent overbaking.

Can I make this cake ahead of time?

Absolutely! This cake can be baked and frosted ahead of time. If stored properly, it should stay fresh and delicious for up to a week.

What’s the best way to serve this cake?

This cake is delightful on its own, but you can also serve it with a dollop of whipped cream or a scoop of your favorite ice cream for an extra special treat.
